Asian style Coriander Soup
Asian style Coriander & Pork Meatball Noodle Soup

This is a great energizing wholesome meal in one packed with great flavour. With the star of the show being the delicious aromatic coriander.
Ingredients
- For the meatballs:
- 1 tbsp. coriander leaves, finely chopped
- 300g lean minced pork
- 60g fresh breadcrumbs
- 2 spring onions, finely chopped
- 2 garlic cloves, chopped
- 2 tbsp. sesame seeds, toasted
- 1 tsp wholegrain mustard
- 1½ tbsp. oyster sauce
- 1 egg, beaten
- Rapeseed oil
- Salt and freshly ground black pepper
- For the soup:
- 2 tbsp. chopped coriander leaves
- 50g fine rice noodles
- 2cm piece fresh ginger, sliced into julienne
- 3 spring onions, sliced diagonally
- 2 garlic cloves, finely sliced
- 2 medium carrots, sliced
- 1.2 litres vegetable stock
- 2 tbsp. nam pla (fish sauce)
- 2 tbsp. soy sauce
- Rapeseed oil
Preparation
To make the meatballs, combine the pork mince, spring onions, garlic, breadcrumbs, sesame seeds, mustard, oyster sauce, coriander, beaten egg, salt and pepper in a bowl and mix well.
Test the seasoning by frying a very small piece of the mixture and check the seasoning then adjust the main mixture if required. Using wet hands, shape the mixture into 20 mini meatballs.
Heat a large frying pan over a medium heat. Add some oil and sauté the meatballs for about 6 to 7 minutes, until cooked through and set aside on a clean plate.
Add the spring onions, carrots and pour in the stock. Bring to the boil and then reduce the heat, add the soy sauce and simmer for about 15 to 20 minutes.
Add the noodles and cook for 2 to 3 minutes. Stir in the coriander leaves and season with the nam pla (adding more as required to season). You may need to add a little more. Add the meatballs to the soup and ensure that they are heated through.
Divide the noodles between 4 soup bowls and ladle in the soup and meatballs on top. Garnish with coriander leaves and serve immediately.
Winter Tips to add Coriander to your recipe
Pair 2 tbsp chopped coriander with 2 tbsp chopped fresh mint and a splash of vinegar over fresh sliced tomatoes & mozzarella.
Stir-fry vegetables and beef and make a sauce with soy sauce, Asian sesame oil, fresh ginger and chopped coriander.
Lime and garlic pureed all together with some salt and olive oil , with lots of fresh coriander for use as a chicken marinade.
Use fresh coriander in hot water with lemon and honey for a delicious herbal tea.
Add freshly chopped coriander to chickpea flour pancakes; serve with an avocado and rocket salad filling and a tomato and raisin chutney.
Add ½ pack coarsely chopped coriander to fresh guacamole for an authentic Mexican flavour.
